DIVIDER WITH GRID

Square hydraulic divider available in versions of single or 20 divisions. The grids can have different shapes and number of divisions and the size required can always be found. This machine is truly versatile. Ideal for diving dough and specifically indicated for baguettes, loaves and ciabattas. The pieces have a strictly identical shape, with variable height according to weight selection. The machine is hydraulic controlled. Fast and silent. It is supplied with a pressure increase/reduction device and a pressing time adjuster by PLC to widen harder dough to the maximum. Basket and knives in stainless steel 18/10; moulders in acetylic food resin designed to reduce waste. Mounted on castors, it is of solid construction and easy to clean. Servo devices activated by hydraulic unit with automatic working cycle and manual starter selector. Three phases power + neutral at 230 V or 400V, 50 or 60 Hz frequency. Special voltage on demand. The machine conforms to applicable European Directives and is guaranteed 2 years (excluding parts subjected to normal wear and tear).

The grids and shaping plates are used to simultaneously cut and shape even very moist dough for baguettes using a single machine, so that once the dough has been cut it can be placed directly in the oven.

Work cycle with shaping plate

1. prepare the weighed dough in a box;

2. leave the dough in the proofing chamber;

3. take the box and empty it into the basin;

4. sprinkle abundantly with flour;

5. close the cover;

6. select low pressure;

7. press using the joystick;

8. open the cover manually;

9. select high pressure;

10. close the grid holder;

11. press using the joystick (cut);

12. open the grid holder manually;

13. remove the pieces of cut dough;

14. place them in the oven.
